Noctem Artisans Brasseurs Opens in Quebec City
On October 1, 2015, Noctem Artisans Brasseurs opened as a brewpub on Rue du Parvis in Quebec City’s Saint-Roch neighborhood. The brewery was founded by Jean-Michaël Noël, Yann Gravel, and Brian Pierce, university friends who had previously developed recipes and experimented with brewing at home. The opening followed approximately fourteen months of development and combined an on-site craft brewery with a full restaurant. Noctem developed an approach that connected beer with food while drawing particular inspiration from the brewing culture of New England. Its early beers included hop-forward recipes as well as culinary experiments such as Herbosophie, a saison brewed with herbs. In 2018, Noctem expanded beyond its original brewpub by opening a larger production brewery in Quebec City’s Saint-Malo district, allowing its packaged beer to reach retailers across Quebec.
