Omnipollo Introduces Bianca Mango Lassi Gose
In 2015, Swedish beer producer Omnipollo introduced Bianca Mango Lassi Gose. Inspired by the Indian yogurt-based mango lassi, the sour beer combined mango purée, lactose, and rock salt with a Gose foundation. Contemporary reviews document the beer in circulation by January 2015, although a precise first-release date is not publicly established. Bianca became the starting point for Omnipollo’s wider series of lassi-inspired sour ales. By combining acidity and salt with fruit, sweetness, and a creamy mouthfeel, the beer became an early prominent example of the approach later commonly described as pastry or smoothie sour beer. Omnipollo subsequently expanded the Bianca concept through numerous fruit- and dessert-inspired variations.
