Schneeeule Debuts with Traditional Berliner Weisse
In March 2016, Ulrike Genz introduced Schneeeule and its first Berliner Weisse at the Berliner Weisse Gipfel in Berlin. Working with Andreas Bogk at the former Willner brewery, she brewed the debut beer on a small homebrewing system. The presentation marked the public launch of a project devoted to reviving the city's traditional sour wheat beer. Schneeeule developed around fermentation with lactic acid bacteria and Brettanomyces yeast, emphasizing the character of Berliner Weisse itself. Genz subsequently had other Berlin breweries produce wort to her recipes and carried out fermentation and further processing herself. Her range included the unflavored Marlene alongside variations such as jasmine-infused Yasmin, combining the recovery of an older brewing tradition with new interpretations.
