Brewers Begin Reproducing Burton Water Through Burtonization
In 1878, British chemist Charles William Vincent published a process for reproducing the mineral character of Burton-on-Trent brewing water. Burton’s groundwater was naturally rich in calcium sulfate and other dissolved salts, and its composition had helped the town’s brewers produce pale ales with a dry finish and pronounced hop bitterness. Breweries elsewhere had struggled to achieve the same results with their own local water. Vincent’s process treated brewing water with mineral salts so that it more closely resembled Burton water. This practice became known as Burtonization and allowed breweries outside Burton-on-Trent to adjust water deliberately for pale ale production. Other late nineteenth-century brewers and brewing chemists refined such treatments, turning local water composition from a fixed geographic constraint into a controllable part of the brewing process. Burtonization became an important early example of practical brewing-water chemistry.
