The Complete Genome of Brewing Yeast Is Published
In April 1996, an international research consortium released the complete genome sequence of Saccharomyces cerevisiae. The project involved more than 600 scientists working across over 100 laboratories and produced a sequence of approximately 12 million DNA base pairs distributed among sixteen chromosomes. It was the first complete genome sequence published for a eukaryotic organism—a form of life whose cells contain a nucleus. The sequenced reference was based on laboratory strains related to S288C rather than on a commercial brewery culture, but Saccharomyces cerevisiae is also the principal species used for ale fermentation. The genome provided researchers with a shared genetic map for investigating yeast metabolism, fermentation, stress tolerance, flavor formation, and other cellular processes relevant to brewing. It marked the transition from classical yeast genetics toward genome-scale research and later enabled detailed comparisons among laboratory, wild, and domesticated brewing strains.
