Genomic Research Identifies Kveik as a Distinct Domesticated Yeast Group
On September 12, 2018, researchers published genomic and brewing analyses of kveik cultures maintained by farmhouse brewers in western Norway. The sampled yeasts formed a genetically related group distinct from the principal industrial beer-yeast lineages and shared traits including rapid warm fermentation, strong flocculation, and domestication-associated loss of phenolic flavor production. The research did not “discover” kveik, which farming communities had preserved and reused for generations. Instead, it gave scientific definition to a living yeast tradition and helped explain why these cultures behave differently from standard commercial ale strains.
