Konrad Graser Takes Over Hellerbräu

In 1866, Konrad Graser took over Hellerbräu in Bamberg, bringing the brewery into the Graser and Trum family line that still shapes Hellerbräu and Schlenkerla today. Before that, Graser had worked for many years as brewer at the former Michaelsberg brewery, a site connected with Bamberg’s oldest documented brewing tradition. Graser’s importance also lies in the handwritten brewing records he left behind. These brewing logs preserved 19th-century Bamberg recipes and methods, and they later became the basis for the revived Graser beers brewed by Hellerbräu. The event therefore links 19th-century Bamberg brewing practice, Schlenkerla family history, and the modern revival of historical Franconian beer styles.
